Recipe: Chicken, Bacon & Broccoli Fettuccine Bake

On my last post I mentioned that I started Grad School and I am really excited about it, but as you all may (or may not) know, I am a stay at home mom. This means that the financial responsibility rests on my husbands shoulders and now we have added grad school to the list (thank goodness for installment payments option). He has been pushing me to pursue my grad degree and I finally was able to this year. 

Well, since he was traveling for work, Kiddo and I decided to make a special dinner to welcome him back home and thank him for his hard work. And while I was looking through my Facebook News Feed I saw a photo of a recipe from A Dash of Sanity. It was called Chicken Fettuccine Bake. It sounded great and looked amazing, so I went ahead and made it.

I made a few changes to adapt the recipe to our taste, and it turned out so good that I am making it today again! Kiddo loved it too (specially the bacon), but he is not a picky eater, his dad on the other hand… he definitely is the picky eater in this house, but he approved this one (two thumbs up!)

So, the original recipe as I mentioned is called Chicken Fettuccine Bake from A Dash Of Sanity. I adapted it to make it fit our taste. 

These are the changes I made to the recipe:

1. Replaced the sun dried tomatoes for broccoli,
2. Doubled (more like tripled) the amount of bacon
3. Doubled the amount of parmesan cheese in the sauce, and also 
4. Seasoned the sauce with salt and pepper before tossing the pasta in. 

Our favorite part of this dish is the sauce. The thickness of the sauce is perfect for us because every noodle gets covered with it, not like canned sauce that goes all to the bottom of the dish and is more like a soup instead of a pasta dish. 




Kiddo said his favorite part was the bacon, of course! That's why I triple the amount of bacon in every recipe haha! And we love extra crispy bacon, so that's why you may find it a little bit dark, we don't like bendable bacon in this house :D

I encourage you all to try this recipe, because I know that you are going to like it as much as we did. The best thing is that you probably have all the ingredients in your pantry and fridge already. Super simple and delicious. What else could you ask for?
