Recipe: Chicken, Bacon & Broccoli Fettuccine Bake

On my last post I mentioned that I started Grad School and I am really excited about it, but as you all may (or may not) know, I am a stay at home mom. This means that the financial responsibility rests on my husbands shoulders and now we have added grad school to the list (thank goodness for installment payments option). He has been pushing me to pursue my grad degree and I finally was able to this year. 

Well, since he was traveling for work, Kiddo and I decided to make a special dinner to welcome him back home and thank him for his hard work. And while I was looking through my Facebook News Feed I saw a photo of a recipe from A Dash of Sanity. It was called Chicken Fettuccine Bake. It sounded great and looked amazing, so I went ahead and made it.

I made a few changes to adapt the recipe to our taste, and it turned out so good that I am making it today again! Kiddo loved it too (specially the bacon), but he is not a picky eater, his dad on the other hand… he definitely is the picky eater in this house, but he approved this one (two thumbs up!)

What's Going On?

HOLA!

Well, it's been a long time since the last time we posted. We had a lot going on after we came back from our vacations in Puerto Rico and Florida. We had a blast, by the way!

So, here is a little update of what's been going on in our lives:

  • Our kitchen sink was plugged: Since we left for a month during winter, you know what happened to the drain pipes, right? One day after coming back from vacation, my sink stopped draining so I couldn't wash dishes, which meant I couldn't cook (yeah, that was my excuse), which meant hectic days because the earliest plumber appointment was 3 days after the incident. It is fixed now, woohoo!
  • Our backyard was like a jungle, and my poor plants were all "dead" from the frost of the cold days. Weeds have taken over my backyard and now we'll have a war against them lol
  • I got accepted in GradSchool. Hooray! I cannot express enough how amazing, nervous, anxious, happy I feel about it! It's been almost 5 years since I graduated from my bachelor's. I am going from single, young, living wth my mom and going to school, to married, mother, older, with responsibilities going to grad school, isn't that great? haha! So, this is going to be an interesting adjustment, but I am excited about it.
  • We are turning the "storage/do not enter/enter at your own risk room" to a guest room and office combo. Now that I will be back at school I need a neutral area to study, and the guest room is the only place with peace (well, only when you close the door)
  • And last but certainly not least, I started my weight loss journey. Do you know how much food I eat while in Puerto Rico… Believe me I don't even want to remember, so I have to get back in track and make better choices for meals and exercise a bit. 
Now, whats going on with the Kiddo?
  • He is 4 years old now!
  • He now dislikes cats because they poop in his garden beds
  • He is going to a child care center for the first time, couple of days a week while I am at school
  • His favorite food at the moment is pork chops (he calls them carne with bones, which you may know means: meat with bones)
So far that is a little bit about what's been going on. But, stay around because I have couple of things that I am going to share with you all, like Mike's new pet. It is low maintenance, takes little to no space and is quiet. Hint: it is from HexBug.
